Chocolate Raspberry Parisian Macaroons

Here in the States, we have been miss-educated.

Before your mind wanders too far into what number of thing I could be talking about, remember, this is a food blog.

What I am talking about here is the quite tragic, gross miss-representation of a macaroon.  Recently, this delectable Parisian cookie has become trendy, but many Americans still think of macaroons as a dense, coconut cookie, or worse, a hard coconut sandwich cookie.  Quel dommage.

I’ve seen pictures of these around and thought they looked like a fun idea.  In search of a quick dinner one night, I decided to give it a go.

Broiled Soy Ginger Chicken

Do you ever make something and wonder why you don’t make it more often or use that technique more often?

For some reason, I always forget about marinading meat overnight.  It’s such an easy way to have an incredibly flavorful meal.  Come dinner time, the meat cooks up in a few minutes in the marinade.  So easy.

This soy-ginger chicken is incredibly moist and flavorful.  It is similar to a teriyaki chicken, but not quite as sweet or citrusy.  By marinading in an ovenproof dish, all you have to do is add your veggies, let your dish come to room temperature, and broil.

Carrot Cake Muffins

I am not wonder woman.

I’m sure you all would have easily mistaken me.

Right?

Actually, I think the real the problem is, I tend to mistake myself.  I regularly give myself an impossibly long list of tasks to get done in a day, or morning, or hour, and then get discouraged and frustrated when I inevitably don’t get every single item done.  I rush around like a mad person all day trying to complete the impossible goals I set for myself.  I end up doing a bunch of things half-fast and not really enjoying any of them, because I am too focused on completing the task and moving on to the next one to really enjoy the living that happens in between.

Ouch.  That hurts a little to admit.

It all comes down to expectations and setting realistic ones for myself.  I’m not talking about setting the bar low so I always reach it.  I need challenges, it’s just the way I work best.  But, there’s a difference between setting goals that will challenge myself and knowingly expecting the impossible.
